Sourcing & Selecting

Korean grocery stores, Chinese grocery stores Do not confuse it with mung bean sprouts. Soybean sprouts have large yellow heads and stems are longer.
Substitutions: 
Mung Bean Sprouts are similar.
How to Measure: 
1 cup of soy bean sprouts (dry) = 30g = 0.4lb = 5oz
Storage: 
Refrigerate in a plastic bag (3 days). Do not wash before storage.
Preparation: 

Remove tails.

How do I blanch it?

Many recipes with bean sprouts requires blanching. First, boil water in a pot. (enough water so that all bean sprouts can be immersed in the water).

Put washed bean sprouts in the boiling water and wait for 2-3 min until they become soft.
