Korean Sweet Potatoes 고구마 almost always feature brownish purple skin with yellow flesh. They are much more dense and sweeter than North American sweet potatoes. There are infinite ways to enjoy this popular root vegetable in Korea. They are often enjoyed simply roasted or steamed as a snack. One of the popular traditional dishes is Mat Tang, or Candied Sweet Potatoes. This is an incredibly delicious side dish that can also be served as a snack or dessert. Dangmyun, the glass noodle used in the famous korean dish "Japchae," is also made from sweet potatoes. Korean sweet potatoes are rich in beta-carotene and are a good source of magnesium. They are also fat free and rich in fiber. Korean sweet potatoes are sold fresh.

Substitutions: 
Use Yams or Taro. However, taro should not be consumed raw because of the presence of calcium oxalate.
How to Measure: 
1 cup of chopped Korean Sweet Potato weighs approximately 140g.
Storage: 
Store is cool, dry, and dark environment. If stored properly, they will last 3-6 months. Do not store in refrigerator. Do not wash them until you are ready to cook because as a root vegetable, moisture will cause them to sprout.

Preparation: 
Wash throughly to remove dirt. They can be roasted, pureed, steamed, baked. grilled or even added to soup or salad.
