Largely known as a medicinal herb, taproots of young burdock plants are harvested and eaten as a root vegetable in Asia. In appearance, they are long, slender and brown-skinned roots. They are meaty yet crunchy, and crisp yet chewy. Due to their unique texture, they are popularly served as a variety of different main and side dishes. Burdock has anti-bacterial, anti-cancer and anti-fungal proprieties. Burdock root is also a great source of of dietary fiber, minerals and great for detoxification. They are sold fresh.

Substitutions: 
If you can't find burdock, you can use lotus instead. It looks quite different but has similar texture and taste.
How to Measure: 
1 root is approximately 156 g. I cup of 1" pieces = 118 g. (source: Agricultural Research Service, National Agricultural Library)
Storage: 
Wrap it with newspaper and keep it in the refrigerator (0ºC ~ 5ºC) . Keep peeled or shredded ones in water to avoid colour changes.
Preparation: 

Peel burdock root while washing under running water.

Blanch shredded burdock in boiling water for 3 minutes on high heat. Drain all the water out through a strainer (or you can just soak it in water for 5 minutes).
