Laver or gim is an edible seaweed, which is classified as red algae. In Korea, there are 4 types of roasted laver (or gim):

1. Dol gim ("grown on rock"). Strong in laver flavor, and thick, coarse texture.
2. Jaerae gim (made from Porphyra Yezoensis, which is a red algae with thin leaves known for their radiating pattern). Finer in texture, lighter in color. Most commonly consumed 3. type of seaweed.
3. Parae gim (known as green laver because it's mixed with another seaweed, parae). Herbal flavor, smooth texture.
4.Gimbap gim (made from Porphyra Tenera, which has long leaves). Used to make gimbap. Layered for structural integrity.

Laver is generally smooth and delicate in texture, compared to miyeok (brown seaweed and brown algae). It is high in iodine, iron, and other mineral

Substitutions: 
There isn't a good substitute for laver. If you don't have access to a Korean supermarket, you can order it here.
How to Measure: 
  • 1 cup of laver weighs approximately 156 g.
  • Storage: 

    Do not expose to air for long periods of time. Seal the package completely after opening, and store in a cool, dry place. Avoid direct sunlight. For long-term storage, place the leftover gim in a tightly sealed container and keep in the freezer.

    If you have large quantities of gim, we recommend storing them in our Airtight Containers to keep them crispy and fresh.

    Preparation: 

    Remove any dirt on the surface.

    Coat each sheet with sesame oil and sprinkle with some salt.

    Preheat a pan (without oil) on medium heat for 2 minutes and roast the seasoned laver for 3 seconds on each side on low heat.

    Cut into rectangles (about 2.25” x 3.25”) and serve.
