4 ozPerilla Leaf, Kaet-nip 깻잎 (1 leaf is about 1-2 g, 40 leaves = 60 g or 2 oz)
1⅓ tbsSoy Sauce (regular) 왜간장
2 tspSugar 설탕
¾ tspGochugaru, Korean Hot Pepper Flakes 고춧가루 (optional)
½ tspSesame Oil 참기름
2 tspGarlic (minced) 다진 마늘
1⅓ tbsChopped Green Onion 다진파
2 tspVegetable Oil 식용유
½ tspSesame Seeds 깨 (optional)
           
tips: 

Good to Know
Perilla leaves decrease in volume dramatically when cooked. 60g (about 40 leaves) of perilla leaves yield about 1-2 servings.

Optional Ingredients and Substitutions
Gochugaru (Korean red chili flakes): can be omitted.
Sesame seeds: Sesame seeds are a very nice addition to this dish but they can be omitted.

1. Prepare Perilla Leaves

Wash 60 g of perilla leaves twice thoroughly under running water. Put it in a strainer to drain water. You can cut the leaves in half if you like.

2. Make seasoning

Mix 2 teaspoons of soy sauce, 1 teaspoon of sugar, ¼ teaspoon of sesame oil, 1 teaspoon of minced garlic, 2 teaspoons of chopped green onion and ½ teaspoon of red chili flakes (optional) in a small bowl.

Mix

  • 2 tsp soy sauce
  • 1 tsp sugar
  • ¼ tsp sesame oil
  • 1 tsp minced garlic
  • 2 tsp chopped green onion
  • ½ tsp red chili flakes (optional)

3. Sauté perilla leaves

Preheat a pan with 1 teaspoon of vegetable oil on medium heat for 1 min. Add perilla leaves and sauté for 1 min.

4. Add seasoning

Add the seasoning sauce to the pan and mix well. Keep cooking on medium heat for 1 minute or until the leaves are soft, stirring frequently. Sprinkle ¼ teaspoon of sesame seeds right before turning off the heat.
