Korean hot pepper paste or red chili paste ("gochujang") is one of the essential seasoning ingredients in Korean cooking. For authentic Korean cooking, other hot sauces cannot replace the unique taste and texture of gochujang. Gochujang is used in numerous korean dishes such as bibimbap, spicy rice cake ("dduk bok gi") and spicy chicken (or pork) bulgogi. It is also used to make stew and "ssamjang" (dipping sauce for lettuce wrap).

LIke soybean paste (Doenjang), gochujang is made through a fermentation process. Its primary ingredients are red chili pepper flakes, rice powder, sweet rice powder, and powdered fermented soybeans and salt. It can be gluten free but not all brands are truly gluten free.
