1. Peel & Wash

Peel 3 small potatoes and ½ onion. Wash them thoroughly.

2. Cut

Julienne potatoes into long strips (2” X ⅛” X ⅛” or 5cm x 0.2 cm x 0.2cm).

3. Cut

Slice ½ onion.

4. Soak

Soak potatoes in water for 2 min.

5. Drain

Let it drain for 5 min.

6. Pan-fry potatoes

Put 2 teaspoons of vegetable oil and the potatoes in a pan. Do NOT preheat! Hot oil may splash everywhere because of the moisture in the potatoes. Pan-fry while stirring constantly on high heat for 3 min or until golden brown. Lower the heat to low and pan-fry for 5 min or until the potatoes become soft. Stir frequently.

7. Onion

Add the onion and pan-fry for 2 min while stirring.

8. Finish

Add 1-2 teaspoons of salt (taste and add gradually) and ½ teaspoon of black pepper and mix well. Serve on a plate. Enjoy!
