Portobello mushroom (or shiitake mushrooms)

¼ cupSoy Sauce (regular) 왜간장
2 tbsSugar 설탕
2 tbsWater 물
1 tbsSesame Oil 참기름 (optional)
2 tspGarlic (minced) 다진 마늘
2 tspChopped Green Onion 다진파
¼ tspBlack Pepper 후추

for dipping sauce

1 tbsSoy Sauce (regular) 왜간장
1 tbsWater 물
1 tbsVinegar 식초

½ Red Chili Pepper 붉은 고추 (optional)
½ Green Chili Pepper 풋고추 (optional)
tips: 

You can make 25-30 skewers with the default amount.

Optional Ingredients and Substitutions
Beef: round or sirloin is usually used. You can use any part as long as they can be skewered.
Shiitake mushrooms: Shiitake mushrooms can be used instead of portobello. You will need more numbers since shiitake mushrooms are smaller. If using dried shiitake mushrooms, soak in water for 30 min. Wash and squeeze water out before using them.
Rice cake and crab meat can be omitted.
You can use other meat or vegetables you love.
Vegetarian option:The recipe works great without beef or crab meat.

1. Prepare Mushroom

Wash 4 portobello mushrooms (may need more or less depending on the size) in cold water, drain and dry on paper towel. Cut off the cap and slice mushrooms to 2” (or 5 cm) long and ¼” (or 7 mm)thick. Square off the ends if the mushrooms are big enough.

2. Prepare Carrots

Peel and wash 1 large carrot. Cut them into 2” (or 5 cm) long, ⅜” (or 1 cm) wide and ⅜” (or 7 mm) thick strips.

3. Prepare Green Onions

Wash 6 green onions and cut the green part to 2” (or 5 cm) length and chop up the white part for the marinade.

4. Crab meat (optional)

For crab meat, peel the plastic wrap and cut into 2” (or 5 cm) length.

5. Beef

Cut into 2” (or 5 cm) long and ⅜” (or 1 cm) wide strips.

6. Make marinade.

Mix 4 tablespoons of soy sauce, 2 tablespoons of sugar, 2 tablespoons of water, 1 tablespoon of sesame oil, 1 teaspoon of chopped garlic, 1 teaspoon of chopped green onions & ¼ tsp black pepper in a bowl.

  • 4 tbs soy sauce
  • 2 tbs sugar
  • 2 tbs water
  • 1 tbs sesame oil
  • 1 tsp chopped garlic
  • 1 tsp chopped green onions
  • ¼ tsp black pepper

7. Marinate mushroom

Pour ⅓ of the marinade on the mushrooms.

Marinate beef with the rest of the marinade.

9. Sauté carrots

Sauté carrots with a pinch of salt and pepper on medium heat for 5 min or until carrots become soft.

11. Coat with flour

Dredge the skewers with flour.

12. Coat with eggs

Beat 3 eggs with a pinch of salt and pepper. Then, coat the flour-coated skewers in the egg mixture.

Add

13. Cook

Coat a non-stick pan with vegetable oil and cook the skewers on medium heat for 5 min or until golden brown. Flip the skewers and cook for another 5 min or until golden brown.

14. Serve

Place the skewers on paper tower to drain oil and serve on a plate. Make dipping sauce mixing 1 tablespoon of soy sauce, 1 tablespoon of water and 1 tablespoon of vinegar. You can add 2 teaspoon of chopped green onions and sliced red and green chili peppers to kick it up a notch.
