Braised Tofu, Dubu Jorim
두부조림
Everyone knows tofu is good for the body. Dubu Jorim ("Dubu" means tofu. "Jorim" means braising) gives a great flavour and a spicy kick to healthy tofu that could be somewhat dull to your taste buds. Dubu Jorim is one of the banchan's (side dishes) that appear often on Korean lunch or dinner table. It's a great substitute for a meat dish because of high protein content and affordability.

1 tsp | Sugar 설탕 | |

1 tsp | Garlic (minced) 다진 마늘 | |
pinch | Black Pepper 후추 | |
1 tsp | Sesame Seeds 깨 (optional) | |
1 tsp | Gochugaru, Korean Hot Pepper Flakes 고춧가루 (optional) | |

Optional Ingredients and Substitutions
Tofu: ½ block (about 240g) of Soft tofu was used in this recipe. Soft tofu is good because it absorbs seasoning better but it is more fragile than firm tofu. Do not confuse with EXTRA soft tofu used in soft tofu stew. You can also use firm tofu.
Gochugaru: It adds a very nice flavor to this dish but can be omitted if you don't like spicy food.
Sesame seeds: Use 1 tsp of sesame oil instead.

1. Wash & CutGently rinse tofu under running water. Dry it with kitchen towel. Slice tofu into rectangles (3cm x 4cm x 1cm or 1¼” X 1½” X ⅜”). You can cut into different sizes as long as it’s 1 cm (⅜”) thick. |

2. Panfry tofuPour 1 tablespoon of the vegetable oil in a sauce pan and add the sliced tofu. Do not preheat the vegetable oil! Water from tofu will cause the hot vegetable oil splash all over you! Cook on high heat for 1-2 min for each side or until it turns golden brown on both sides. If you are worried about burning your tofu, do it on LOW heat for 5 min each side. However, tofu will be crispier on high heat.) |

3. Make SeasoningIn a bowl, mix 2 tablespoons of soy sauce, 1 teaspoon of red chili pepper flakes, 1 teaspoon of minced garlic, 1 tablespoon of chopped green onion, 1 teaspoon of sugar, ⅛ teaspoon of black pepper and 1 teaspoon of sesame seeds. |

4. Add seasoningPour the seasoning sauce evenly over tofu in the pan. Add ¼ cup of water |

5. BraiseLet it cook on low heat with a lid for 5-10 min or until tofu is cooked and a little bit of liquid is left at the bottom of the pan. If tofu is not cooked yet and there is no liquid left, add a few more spoons of water and cook until tofu is done. |

6. ServeCarefully arrange the tofu on a plate. Tofu can easily break so use a spatula to transfer gently. Drizzle the remaining sauce on top. You can also sprinkle some sesame seeds as a garnish. Enjoy!. |
